I like to take pictures of a lot of different thins. Still life is always fun for me, as are landscapes and cars. People pics are great as long as I'm capturing 'the moment'. I'm not a big fan of posed pictures, since I don't know how to pose the people...
Night sky photography has been the most challenging for me. With the Perseid Meteor shower outburst the other night, I managed to capture a few dozen of the meteors. However, afterward, I discovered, that I should have also taken a few long exposure (over 1 minute) low ISO images to stack and make a clean back drop for my meteors to stack on top of. The trick with the meteors is they're often too feint and appear/disappear too quickly to leave a solid image. So most come out as feint green streaks. I only captured 2 that were solidly bright enough to have the white head and tail that fades into the green streak.
Anyway, night sky shooting is the most challenging and thus most interesting to me, but I find shooting other things to be quite enjoyable.
